This is made by drying the grapes on esparto grass mats for 1 1/2 to 3 weeks

The fruit is handpicked then whole bunch pressed

though still somewhat reduced but truly pithy

90% of the wine is aged for 4 months in stainless steel tanks and the remaining 10% from the previous year with 12 months in French oak barrels
